stuff for a long weekend of joy...Bob Chinns in Wheeling on Route 21....their FRESH fish and seafood market is open whenever the restaurant is open, which is
always, so one can go in and say, " I will have 2 lbs of FRESH, raw Mahi-Mahi to go, por favor"...
To feed 8 hungry fornicators, buy 2 lbs of FRESH Mahi
1 bag of dry coleslaw with plenty of purple slaw inside
Some homemade Mango Pico de Gallo **** See below
Some grated fresh cheese, whatever you like, but no cheesecurds, gaddarnit.
Some corn and flour tortillas, warmed and ready to rock when the tacos are ready to be made
TO MAKE THE PICO, CHOP 4 TOMATOES INTO SMALL DICED PIECES, ADD 1 SMALL RED ONION CHOPPED, 1/4 CUP OF CILANTRO, 2 SERRANOS DICED, ONE TBSP OR SO OF WINE VINEGAR, 1 FRESH LIME JUICED, 1 MANGO DICED INTO SMALL PIECES, SALT AND PEPPER TO TASTE. MIX THEM ALL TOGETHER AND REFRIGERATE FOR AN HOUR OR TWO. ADD MORE CHILES FOR EXTRA HOTNESS OR IF YOU ARE A PUSSY, USE ONE SERRANO.
Now, the recipe
Add some canola oil to a fry pan, deep if you have it, or a wok...
Add some gahlic (always add gahlic), maybe 3-4 cloves chopped
Get the pan fairly hot and add the fish (slice into 2 ounce strips, so you will roughly have 16 strips or so for 16 tacos, 2 each)
Sear for one minute and reduce heat to med low...cook 3 mins or so and turn, add some blackening seasoning (you can buy any kind, I like Old Bay blackening seasoning) on the turned side. Cook fish and remove from pan, set on platter to cool a bit.
Put dry slaw in a bowl
Put cheese in a bowl
Put Fresh Pico is a bowl
Put tortillas on a plate
Line them up like an assembly line, then put the fish first. Get 2 corn tortillas (2 is the Mexican way) and put the fish down first, then sprinkle dry slaw on top, cheese, pico and repeat for taco 2. Grab your favorite libation and go sit down and feast on the best FRESH fish tacos you will ever have. This recipe is a quasi-rip off of the JAWS taco stand in Kihei, Maui, only they use creamy sauce and I eat healthy and prefer fresh mango pico.
