boil 2 lbs of baby potatoes, skins on is fine, don't overcook!
boil 4 ears of corn, cut kernels off of cob and reserve
15-20 basil leaves
8-10 ounces of grape tomatoes or cherry tomatoes, slice in half, reserve
1 lemon, 2 TBSP EVOO
Add cooled potatoes sliced in quarters to SS bowl
Add corn, clumps ok
Add tomatoes
Add basil leaves cut in half, but not mangled
Drizzle oil, squeeze lemon and salt/pepper to taste
Toss very lightly, so as to not smash the potatoes with your fat, Wisconsin sausage fingers...be gentle!
Serve warm or chill and serve more like a potato salad. If not a big fan of basil and/or you are Polish, sub fresh dill.
