For Thanksgiving I made my mom's recipe of cheese squares -- a version of cheesecake with a graham cracker crust. The filling is sour cream, vanilla, eggs, sugar and baker's cheese. I brought down from my trip in August two pounds of baker's cheese because  you can't find it down here. Mom told me it's because there was a specific dairy that made it, and when it closed it sold the recipe. You can get it at Sendik's.

So I have one more batch I can make unless I can find a substitute for baker's cheese. Anyone know of one?
